The next sip, we find notes of berries and a lot of body. The coffee is extremely sweet, with tropical fruit notes of passion fruit, pineapple or mango, yet it is balanced and clear, a little bit like a multi-fruit juice – but at the same time much more complex. It's incredible how different coffee can taste.\u003c\/p\u003e\n\u003cp\u003eDuring the harvest, only the very ripe coffee cherries are picked, which is checked by measuring the sucrose contents with a brix meter. The cherries are then placed in open plastic containers and left to oxidize for 48 hours. During this time, the sugar content and pH value are constantly monitored. Next, the cherries are placed in cold water in order for unripe, defective or lower-density beans to float to the top so they can be sorted out.\u003c\/p\u003e\n\u003cp\u003eThis is followed by a thermal shock, which means the beans are rinsed with warm water that loosens the molecular structure and starts the fermentation process. The process is supported by adding a small quantity of yeast. The coffee cherries and yeast are then placed in plastic buckets, which are sealed airtight. For the next 38 hours, the coffee and microorganisms are left to themselves. The next morning, the cherries are removed from the bags and, using a machine that Jairo designed himself, cherries with lower density or defects are sorted out. After this first, mechanical sorting, the cherries are sorted by hand and separated into three different categories depending on their ripeness. While the cherries that are not perfectly ripe yet will undergo a longer fermentation and be used for washed and honey-processed lots, only the perfectly ripe cherries are used for naturals. These are put into sealed plastic tanks for four days of carbonic maceration. Besides constantly monitoring the pH value during this time, they make sure the temperature does not climb above 24°C. According to LACIA, a cool and controlled fermentation is key in order to maintain the floral notes of the coffee. The last step is a controlled drying on raised beds to reach a moisture content of 10.5-11.5%. While women carry out the majority of the work in households as well as in coffee production, they receive only a small fraction of the proceeds in many other places. With over 70% of Gasharu's employees being women, the company named this coffee Rugori to honor their invaluable contributions to the coffee community.
