This elegant Geisha is full of floral notes, paired with a beautiful honey-like sweetness.

The post-harvest processing is conducted according to a strict protocol and precision is key for the team at El Placer. The freshly harvested coffee cherries are rigorously sorted to ensure 95% are fully ripe and 5% are semi-ripe. The sorted cherries then undergo a 48-hour anaerobic fermentation in 200-liter canisters, maintained at a consistent 18°C. This phase is enhanced by CO2 injection for controlled fermentation. Following fermentation, the beans are first dried for five days and then immersed in water with an oxygen pump for 48 hours. Finally, the coffee proceeds through a carefully managed, two-stage drying protocol, intentionally decelerated by the application of shade netting.

Sebastián Ramírez, a fourth-generation coffee producer native to Quindío, Colombia, made a pivotal life decision a couple of years ago. After completing seven semesters of law studies, Sebastián transitioned to take over his father’s farm, El Placer, nestled in the village of Buenos Aires de Calarcá. Though we have yet to visit the farm, we had the pleasure of meeting Sebastián at World of Coffee Geneva this year.

The farm spanning 14 hectares and situated at an altitude of 1'650 to 2'000 meters above sea level, benefits from ideal growing conditions in a region that is celebrated for its rich coffee heritage. Here, the coffee trees are naturally shaded by native trees, creating an ideal environment. Today, Sebastián Ramírez is one of Colombia’s best-known specialty coffee producers, and he continues to produce exceptional coffees at El Placer farm year after year.

Colombia holds a distinguished global position within the specialty coffee world. In today's industry, the country is a leading source of high-quality specialty coffees. Its diverse Andean geography, with high altitudes, rich volcanic soil, and varied microclimates, creates ideal growing conditions. Colombia is also one of the few countries where coffee can be harvested almost year-round. Over half a million small, family-owned farms meticulously hand-pick ripe cherries. Colombia is primarily known for its traditional washed processing, yielding clean cups with vibrant acidity and balanced body. However, Colombian producers have been increasingly innovating with experimental methods and cultivating high-quality or exotic varieties like Geisha, Ombligon, Chiroso, or Pink Bourbon, consistently pushing flavor boundaries. This dedication results in an incredible diversity of regional profiles, ranging from bright and fruity to sweet and chocolatey. Strong institutional support from the National Federation of Coffee Growers of Colombia (FNC) further helps producers with marketing and traceability, solidifying Colombia's reputation as a leading specialty coffee origin committed to sustainability.
